Probiotics & cultures

Probiotic bacteria and starter cultures are high-value products of the food and feed industries. Depending on the strain, anaerobic, microaerophilic or aerotolerant conditions may be required; gas composition and redox conditions are set from process development data. Product value is determined by the viable cell count at harvest; viability depends on pH and temperature control.
Application-specific process requirements
Gas atmosphere and redox conditions
Headspace sweeping with nitrogen or CO₂, low DO set points and leak-tight port design; gas composition is set strain by strain.
pH-controlled fermentation
Base dosing that balances acid production. pH control is optimised strain by strain to limit the effect of acid accumulation on growth and viability.
Harvest temperature and viability
Harvest temperature and cooling rate are verified against viability and the subsequent concentration/drying steps. Transfer to centrifugation or concentration is carried out under sterile conditions.
